Sesame is grown primarily for the oil-rich seeds it produces, which come in a variety of colors, from cream-white to charcoal-black. In general, the paler varieties of sesame seem to be more highly valued. The small sesame seed is used whole in cooking for its rich nutty flavour or sprinkled onto bread doughs just prior to cooking. Sesame oil is pressed from the seeds.
